So, now that I’m nicely recovering from my illness, going into week 2 of my new job, I felt like I needed to do something celebratory.. and also quick because I putzed around too much after I got home.. 😀
I thawed boneless, skinless chicken thighs for tonight.. but wasn’t really feeling that inspired. Then again, chicken thighs aren’t really that inspirational with bone-in and skin on. I pan fried those along with some onions, garlic, and mushroom caps. Once the chicken was browned, I evacuated the pan, poured in a few glugs of sweet vermouth, 2 tbsp of mustard, and 3/4 cup of cream. Then I salt and peppered the shit out of it. The result, for being as lackluster about the meat choice as I was, turned out pretty awesome.
Roy was drinking the sauce out of the pan. Either he’s just super classy or I’m that awesome. I think, perhaps, it’s a little of both.
