Late Dinner: The 101 can go to hell

So after a long day at work, and an annoying drive home.. through some miracle of science (or perhaps an iced caramel macchiatto on the way home) I was still alive enough to cook some pretty amazing dinner. Though just barely.

I made some steak roulades stuffed with spinach, cheese, and some bread crumbs that were dampened with a little bit of sweet vermouth. Admittedly, the vermouth was kind of an afterthought because I have a bottle that I wanna go through.. and I sure as hell won’t drink the stuff.. but the vermouth really added something great to the flavor.

Anyway, so once I spread the mixture on the strips of beef, I rolled them up. I tied off the rolls so they didn’t ooze filling.. I browned them in a frying pan, then finished them off at 400 for about 15 minutes.

Along with this, I made some rainbow chard, and some baby potatoes. It was not quick.. nor was it simple. It was totally worth it though.
