It’s been a long haul, but I feel like I am finally over my illness. This was the first day that I felt fully alert, and wasn’t wheezy. So, of course, this equates to me making some sort of epic feast. After work I zip on over to the Whole Foods and take a look at the meat counter.. finding nothing that really jumps out at me, I saunter over to the cheese area.. and it’s there that I discover the motherlode.
Please note, this is merely an approximation of what I got. It was a smaller tub. I can’t think of what I’d do with 2 cups of duck fat. *sigh* Never mind, I can think of plenty but they don’t sell 16 oz tubs. *grumble*
As I was saying, with tub of duck fat in hand, I wander back to the meat counter and think.. hmm.. what can I fry in duck fat.. then I spy the turkey breast. Mind you, it’s about 6:30 at this point.. and I’ve got 45 minutes of driving home to do. (I hate traffic in the valley)
Does this phase me? Of course not.
Turkey breast (basted liberally with duck fat), homemade gravy (story forthcoming), mashed parsnips, and dressing. I still can’t believe I did all this after work. I just finished dinner a little bit ago, and sat down to blog. I’ve been up since 6 and I’m a tad whipped, so I will cut this short..
I consider myself rather talented with sauces, salad dressings, and the like.. the one exception.. the thorn in my side.. has always been gravy. I guess all I needed was duck fat because the gravy (pan drippings, duck fat/flour roux, a little chicken broth, and a smidge of poultry seasoning later) my boyfriend was slathering everything on the plate with it. He has passed over and side-eyed all previous gravy attempts so it was a personal victory.
Winning.
We bought duck confit once and the clerk, who I assume was new, filled the styrofoam container with our duck legs and as much fat as would fit in it. That month we cooked everything with duck fat. French fries are amazing in duck fat, as are vegetables. I think my favorite was baby carrots sauteed in the stuff. If you have any left, you have to try baby carrots. Turkey looks great by the way.
Lucky you. This is really the first time I’ve fiddled with duck fat at all. I thought about making some french fries but I wanted to do something a little more elaborate tonight. I’ve got some left over though, so I think I will try the carrots. Thanks! I just roasted it and kept basting it with duck fat. 🙂
