Someone really should have mentioned the side effects..

..  of making 5 lbs of bacon. I didn’t realize I would wanna eat it all pretty much immediately, but here I am, racking my brain for more bacon heavy recipes. Last night I made carbonara, which turned out pretty fabulously, if I do say so myself. In retrospect, the bacon could have perhaps been smokier, but.. then I have to get a smoker type device. There is no room for a smoker on my patio. I assure you.

Having cured my own bacon and salmon, made my own cheese, made my own pasta, made my own butter, made my own tortillas, etc. I am almost at a loss as to what I can conquer next. Any suggestions, keeping in mind that I hate baking with a deep, fiery passion?

I think maybe next I will make some homemade scrapple, followed by potato chips. The whole kettle frying thing seems interesting.  But what then? Jam? Pickling? I dunno.  Ideas, please!

PS – If anyone mentions meat jelly, they’re banned from life. 😀

    Have you tried a bacon spread? Basically, it’s bacon within an onion compote with coffee (I use tea). Recipes available if you search for “bacon jam” or “bacon spread”. Made it a couple of times with great results and feedback. Good luck. Eat well.

  5. I just love it! Really, in my house, we love all things bacon. My littlest one (who’s a year and a half) walks up to the stove,whenever I’m standing there cooking, and requests, Bacon, puwease! Yeah, we start ’em young.
