So, apparently there were two key elements missing from my previous pasta making attempts.. beer.. and ample time for the dough to dry. While my sauce bubbled away on the stove, I put together my dough. Semolina flour, eggs, water, and a smidgeon of olive oil. I mix, I knead.. I let it sit for a while to dry out because I (invariably) add too much water.
I get to give my new toy (chittara) a try, and I must say.. the noodles were looking better this time.
… fast forward a long freaking time…
Those may look like storebought noodles to the untrained eye.. but it turns out that the chittara is the best purchase I’ve ever made. The noodles were thin like normal, store bought.. not overly gummy like my previous attempts.

It was a ridiculously exciting moment for me. Typically I strive for ‘better than store bought’ but for some reason the consistency of the pasta was always an issue.. but this time they were fabulous! Thanks! *happydance*

The sauce came out pretty good but the noodles were the piece de resistance. I was so happy with the texture!

Thanks!! I was prancing around my living room when I drained them after cooking and saw how awesome they were. I was a little iffy about spending the money on the chittara but seriously.. best 40 bucks I ever spent!!!

It’s a chittara. It looks almost like a loom. You lay the dough on top of the strings, roll over it with a rolling pin, and they fall through. Makes perfect pasta!!

my biggest issue with the hand crank is that the actual pasta dyes.. it’s really REALLY easy to get dough caught in them and really REALLLY hard to get it out. I use my hand crank machine to make the sheets of dough, then the chittara to do the pasta. It’s a smidge labor intensive but the pasta was amazing!
