The Magnum Opus of Meat Curing

.. or at least MY magnum opus. After my long wait, a rocky start last night with my slow bake.. I present to you the best freaking bacon I have ever eaten. By far.

Maple-y deliciousness.

I made quite a bit, so this is a small sampling. I froze some of it, and of course cooked some.

It was an understated maple flavor.. more of an aroma of maple, I guess. The obvious choice for tonight’s meal, due to heat and the minimal prep time was the BLT. It’s a simple, quick classic that displays the awesomeness of homemade bacon quite well.

After all this tasty sandwich, I think I’m gonna go sleep. 🙂
