Salad Week – Day 3: Taco Salad

Any thoughts of eating healthy are essentially out the window tonight. Day 3.. the day of the taco salad is upon us.  I pulled an Aunt Sandy and purchased taco bowls because.. it’s hot as hell in my apartment and I’m not cooking anything until it’s less than 100 outside…  Chopped lettuce, tomatoes, grilled onions, black beans, shredded cheese and some sour cream.. oh and my taco bell-esque baja sauce (ranch + taco seasoning) for dressing. Just add grilled meat.

 

Of course it’s healthy!! It’s a salad!

  1. That reminds me of my dad who will act very proud of himself for ordering the crispy cobb salad at a restaurant and then ask for extra blue cheese dressing and smother it with it. But if it is a salad it has to be healthy! Anyway this salad looks great and I love the name of your salad dressing!
