Salad Week – Day 7: Pasta Salad

In honor of the long weekend and Labor Day, I thought I’d do something a little barbque-ish. I chopped some squash, zucchini, asparagus, broccoli, carrot and tomato. Add cooked macaroni, and a mayo based dresssing.

 

The veggies and pasta part is all pretty self explanatory.. the dressing is where the real magic is. Add 1/2 cup mayo, 1/4 cup milk, 2 tbsp sugar.. salt and pepper to taste. Stir vigorously to combine.  Toss over chilled veggies and chilled (cooked) pasta.

As you may have noticed, we’ve reached the conclusion of salad week.. not a moment too soon, either.. because I’m kinda sick of rabbit food.

Not to copy others but with college football finally starting this year, It’s bar food and beer time. Watch for my upcoming cheese steak post. Go ‘Canes.
